If you have never brined a chicken before smoking it, you are in for a real eye opening treat.  Brining chicken and turkey adds flavor to the meat and helps retain moisture content.  Brine consists of a salt water solution mixed with sugar, and any other spice you would like to add.

What Else Can I Brine?

Brining can be done with other kinds of meat.  It works especially good with pork loin chops.  Wild game such as duck, goose, and pheasant can also be brined with excellent results.

Chicken…the real king of the smoker?

Ask anyone who smokes meat what their favorite meat is and most likely it will not be chicken.  In the south you will get “pork”.  In Texas, beef reigns supreme.  But give this bird a try.  Chickens are smaller and take less time.  When done correctly, they are a great alternative to the other more popular choices.
